Whole Wheat Vegan Brownies

by lacey.dumler

How’s that title hitting you guys? Are you delighted by the thought of having your brownies and your endosperm and germ too? Or are you more in the camp of – get your healthy ingredients away from my treats? I personally fall somewhere in between. I do love me a good old-fashioned sugar bomb. But I’m also a “dessert every day” kind of person.  As such, I try to crank up the nutritional content of all my treats.  Why not?

To that end, I rarely have white flour in my pantry and make almost everything with whole wheat flour or buckwheat flour.  I thought I’d share this recipe for those of you who, like me, want your treats and your fiber and micronutrients too ;). I hope you enjoy it!  These whole wheat brownies are especially delicious when paired with homemade banana ice cream.

[lt_recipe name=”Vegan Whole Wheat Brownies” summary=”Walnut studded brownies with a bit of a nutritional boost from whole wheat flour. ” servings=”8 to 12″ total_time=”20M PREP, 20M BAKING” print=”yes” image=”https://poweredbyplantz.com/wp-content/uploads/2022/07/IMG_5999-225×300.jpg” ingredients=”1/3 cup coconut oil (5 tbsp) or vegan butter;1 cup vegan chocolate chips ;1 cup unsweetened soy milk;1.5 cups whole wheat flour;3/4cup brown sugar;1/3 cup cocoa powder (5 tbsp);1/2 teaspoon baking powder;¼ teaspoon salt;1 cup raw, unsalted walnuts” ]Preheat the oven to 350 and line an 8X8 pan with parchment paper. ;In a small sauce pan, melt together the coconut oil (or vegan butter), chocolate chips and milk.;In a medium bowl, whisk together the rest of the ingredients, except for the walnuts. ;When the chocolate is melted, pour the chocolate mixture into the flour mixture and stir to combine. Fold in the walnuts.;Pour into the prepared pan and bake until a toothpick inserted into the center comes out clean. Approximately 30 minutes. Don’t over bake as this will give you dry brownies! Allow to cool before cutting. Enjoy![/lt_recipe]

Looking for other nutritionally dense treats?  Of course you are.  Try out these Chocolate Tahini Cereal Bars or these no-bake Dyno Bars.
