Veggie Pâté Sandwich with Mustardy Arugula

Hi folks.  You may have noticed that I’m on a bit of a sandwich kick.  I’ve come to believe that enjoyment of a good sandwich is vital to my emotional well-being.  So here’s another idea to share, packed with loads of flavour and green things.  Make one for yourself, and make one to surprise a friend.  Nothing says “I love you, man” like a sexied up veggie pâté sandwich, they’ll thank you for it.

INGREDIENTS
1 batch of Sun-Dried Tomato Basil Pâté
1 Medium cucumber- cut as thinly as possible (or peeled into strips with a vegetable peeler)
1 box fresh alfalfa, sunflower, or other sprouts
Roasted red peppers cut into thin ribbons (optional)
 A few cups of fresh arugula
Juice of Half a Lemon
2 T olive oil
1 tsp deli mustard
Your preferred bread – I used pumpernickel.
METHOD
  • In a small bowl, whisk together olive oil, lemon juice, mustard, and a pinch of salt.
  • Spread a good thick spread of pâté on one of the pieces of bread.
  • Layer on the cucumbers, sprouts, and a crack or two of fresh pepper.
  • Toss arugula in dressing (use sparingly, it’s pretty strong), and pile on top of everything else.
  • Eat!

    Looks delicious! I would use any kind of non-gluten bread because I am keeping a diet but I still want to treat myself with some veggie sandwich. Can't wait to try, thanks a lot for sharing!
