Vegan Poke Bowl Bar: Grocery List + Step-by-Step Instructions + COOKIES
Hello friends! I have a meal prep guide for you today. In this guide I’ll walk you through preparing delicious, marinated beets, seasoned brown rice, 5 ingredient kale salad, Super Quick Pan-Fried Tofu, and more. Use this Vegan Poke Bowl meal prep guide to either:
- Please a crowd (or a picky family) by creating a buffet
- Create a Poke Bowl Bar in your fridge that you can access all week
The guide also includes a recipe for Chickpea Chocolate Chip cookies, because who doesn’t need treats? A huge part of my personal meal-prep practice is making healthy snacks. They’re for my growing son, of course, but they’re also for me! I enjoy sweet treats on a daily basis, so I like to ensure that those treats go towards meeting my nutritional needs as well.
Please a crowd (or a picky family) by creating a buffet
Feeding a family isn’t always easy. Everyone has their own likes and dislikes, and finding something something everyone can agree on (that’s also good for them!) can be a challenge. This is especially true when some members of the family are transitioning to a more plant-based diet, and other members are still clinging to meat and/or dairy.
Buffets can be a great solution for this. In the case of this Poke Bowl Bar, all the ingredients are laid out on the counter, then everyone can assemble their own bowl. I love Ellen Satter’s approach to the Division of Responsibility In Feeding. In a nutshell, you provide the what and the when, everyone else decides their what and how much. If there are people who insist on meat, they can prepare that meat and add it to the buffet as a separate ingredient, served right along with the others.

If you don’t have a tough crowd to please, you’re single, or you’re in a couple that loves the same foods, use this guide to give you a jump start on the week! Prepared items can be stored separately, then mixed and matched throughout the week to create tasty and varied bowls.
I refer to this as preparing “Versatile Basics.” Of course in this case the ingredients are somewhat specific to poke bowls, but you could also use the individual components for other salads, wraps or snacks. When simple things are prepped and ready in the fridge, whipping up nutrient-dense meals takes no time at all.
Developing a Meal-Prep Mindset
Finally, this little meal prep guide asks you some questions and gives you some options. Can you cook your beets the day before? Do you want to make extra rice for freezing or for rice pudding? Would you like to double that cookie recipe?!
All of these little cues are there to help you develop a forward-thinking kitchen mindset. Always asking yourself little questions today, to help make tomorrow a bit easier.
I truly hope you find this useful. Please drop me a line or a comment if you have questions or feedback!
All the best,
-lacey
